Recipe: Vegan Beyond Meat Sausage and Kale Gnocchi
1 package gnocchi
1 tsp olive oil
½ onion, diced
4 cloves Ggarlic, pressed
1/2 tsp red pepper flakes
¼ cup White Wine
Small bunch Kale, roughly chopped
Salt and Pepper, to season
¼ cup Vegan Parmesan Cheese
Heat oven to 400 degrees F. Place sausages in oven safe dish and bake for 25-30 minutes until cooked through. Let cool and slice into bite size medallions.
Meanwhile, place oil in a large skillet over medium-high. Add the onions and sauté until they start to soften, Add the garlic and sauté one more minute.
Add the kale, red pepper flakes, and wine. Season with a pinch of salt and pepper. Toss until the kale has wilted and is bright green. If you need to use a lid to help wilt, that’s fine. Toss in the sausage medallions.
In the meantime, cook the gnocchi according to package directions. Drain and reserve about 1/3 cup pasta water. Add the gnocchi to the sausage and kale mixture; toss to combine. Add just enough pasta water to create a thin sauce.
Off heat, add more salt and pepper to taste, another drizzle of olive oil and/or sprinkle with a plant-based parmesan cheese.
