BISON PAD THAI

A bold fusion dish that’s rich in flavour, nutrient-packed, and rooted in tradition with a wild, modern twist.

SERVES 4 | PREP. TIME 15 MIN | COOK TIME 30 MIN

Ingredients:

  • 2pk of pad thai noodles (570g)

  • 2pcs - garlic gloves, minced

  • ½  cup - onion, diced

  • 1 bell pepper, thinly sliced/julienne

  • ½  cup - mushroom, brown or white, thinly sliced/julienne

  • 1 cup - spinach, washed 

  • 4 tbsp - oil

  • 2 eggs, beaten

  • 1pk (454g) of Amaranth Bison Primal Blend 10%

  • 300g shrimp, uncooked./cooked 

    Pad Thai Sauce:

    • 4 tbsp - tamarind paste (substitute: rice vinegar)

    • 1/2 cup - water

    • 2 tbsp - fish sauce

    • 2 tbsp - soy sauce (gf - tamari)

    • ½ cup brown sugar

      Garnish:

    • lime wedges

    • 2 green onions, chopped

    • Thai basil, chopped

    • ¼ cup cilantro

    • ¼ Dry roasted peanuts (optional)

PREPARATION

Prepare the Pad Thai Sauce:

  1. Combine all ingredients in a small saucepan over medium heat. As soon as the sauce starts to simmer and the palm sugar is completely dissolved, move the pan off the heat.

  2. Taste the sauce and adjust it to fit your taste. Some people like their sauce a bit sweeter, so if that's you, add a bit more sugar and simmer for another minute. If you prefer a bit more salty/umami flavor, add a bit more soy or fish sauce. You can also add a bit of lime zest if you like a more pronounced citrus flavor.

Prepare the Pad Thai Noodles:

  1. Put water in a pot and bring it to a boil.

  2. Once boiling, add the noodles and simmer for five minutes.

  3. Drain and rinse thoroughly in cold water.

  4. Set aside for the assembly of the dish. 

Assembling the Pad Thai:

  1. Heat 4 tbsp oil in a wok or large saucepan over medium-high heat. Sauté garlic and onion for one minute.

  2. Add the bison primal blend, shrimp, mushroom, and bell pepper. Once everything is cooked, set it aside.

  3. Add more oil and the beaten eggs. Make sure to scramble the eggs and break them into small pieces as they cook.

  4. Add the noodles, sauce, spinach, and (optionally) peanuts. Toss everything to combine well.

  5. Serve the dish on a plate or bowl. 

  6. Garnish the top with green onions, cilantro, lime wedges, and Thai basil.

  7. Eat and enjoy!!
