There’s something about having friends or family over that calls for food that’s a little more fun, something you can build, share, and enjoy together around the table.
And for a lot of us, that kind of food brings back familiar favourites, like a classic Taco Bell crunchwrap. The layers, the crunch, the melty centre… It's so good!
But if you’ve ever had one, you probably also know the feeling that comes after, heavy, sluggish, and not quite how you want to feel after a good meal.
So instead of giving it up, I took the same idea and made it differently.
Using simple, real ingredients and building it at home, this version keeps everything you love.

Okay, let's talk about this beef, because I genuinely get excited every time I cook with it. The Amaranth Primal Blend is not your average ground beef, and once you try it, you'll understand why I can't stop recommending it to people.

Riega Organic Taco Seasoning Mix - clean-label seasoning that lets the beef shine.
Romaine lettuce - crisp, fresh, and perfectly cooling against the warm filling.
Yellow pepper - sweet crunch and a pop of colour.
Onion- sautéed or raw, your call.
Avalon Organic Sour Cream - cool, creamy, and made with real ingredients.
Molcajete Guacamole - rich and fresh, no fillers.
Molcajete Pico de Gallo - bright tomato salsa with real texture.
Mrs. Renfro’s Nacho Cheese Dip - bold, melty, crowd-pleasing.
Happy Days Goat Marble Cheese - a creamy, slightly tangy cheese that melts beautifully.

Olive oil (or tallow of choice) - for searing the wraps to golden perfection.
These are my go-to toppings, but honestly, make it your own. Swap in what you love, leave out what you don't, and build the Crunchwrap that's right for you. That's the whole point of taco night.
Instructions
These come together faster than you'd expect, and the whole process is genuinely fun, especially if you have people helping (or just watching and stealing chips).
1. Cook the filling. Heat a pan with olive oil or tallow of your choice. Add diced onion and cook for a few minutes until softened, then add the Primal Blend Ground Beef and Riega Organic Taco Seasoning. Cook until browned and fully cooked through, then set aside.
2. Prep the tortilla. Take one tortilla and lay it flat. Cut a small circle out of it. We used one large tortilla to cut two small circles. This little piece is the key to sealing your Crunchwrap shut, so don't skip it. Set aside.
3. Build your Crunchwrap. Start with a full-size tortilla laid flat. Layer your ingredients in any order you choose. This is the order we did: sour cream → guacamole → nacho cheese → Primal Blend beef → tortilla chips → lettuce → cheese → peppers → pico de gallo.
Tip: Resist the urge to pile it too high — a slightly lighter fill folds and sears far more cleanly, and every bite still has everything.
4. Heat the pan. Warm a pan over medium heat while you finish building your wrap.
5. Fold it up. Place the small cut-out tortilla circle on top of your layered filling. Add a small dab of sour cream or nacho cheese on top of the small tortilla to help it stick. Then fold the edges of the larger tortilla up and over, working your way around the wrap to seal it into a neat parcel.
Tip: If your tortillas feel stiff and hard to fold without cracking, place them on a plate, sprinkle a few drops of water over them, top with another plate, and microwave for 10 seconds. This lightly steams them and makes them beautifully pliable.
6. Cook until crispy. Place the Crunchwrap folded-side down in the hot pan and cook for about 3–4 minutes until golden and crisp. Flip carefully and cook the other side.
Tip: Use a big spatula and flip with confidence — slow and hesitant is how the fillings end up on the stovetop.
7. Serve and enjoy. Let it cool for just a minute, slice it in half if you like, and enjoy while it's warm.

What I love most about this recipe is how naturally it turns into an event. Here's the thing I keep coming back to: after eating these Crunchwraps, I felt great. Not just fine, genuinely great. Full and satisfied, but none of that heavy, foggy feeling I used to get after the fast food version. My friends said the same thing.
