Ancestral Beef Tacos

Rich in flavour. Rooted in tradition. A nourishing take on a weeknight classic.

Serves: 4 | Prep Time: 10 min | Cook Time: 15 min

Ingredients

  • 1 lb Amaranth Ancestral Ground Beef

  • 1 tbsp avocado oil or olive oil

  • 1 small yellow onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tsp chili powder

  • 1 tsp ground cumin

  • ½ tsp smoked paprika

  • ½ tsp sea salt

  • Optional: 1 tbsp tomato paste or a splash of bone broth for depth

  • 8 small corn or cassava tortillas, warmed

  • Toppings: shredded lettuce, diced tomatoes, avocado, fresh cilantro, lime wedges, plain yogurt or sour cream

Instructions

  1. Heat oil in a skillet over medium heat. Add chopped onion and sauté until soft (about 3-4 minutes).

  2. Add garlic and cook until fragrant, then add the Ancestral Beef, breaking it up with a spatula.

  3. Once browned, stir in spices and optional tomato paste or broth.
    Simmer for 5-7 minutes until flavours meld.

  4. Warm tortillas and spoon in the beef mixture.

  5. Top with your favourite fresh fixings and serve with lime wedges for a bright finish.
