Ancestral Beef Tacos

Ingredients
1 lb Amaranth Ancestral Ground Beef
1 tbsp avocado oil or olive oil
1 small yellow onion, finely chopped
2 cloves garlic, minced
2 tsp chili powder
1 tsp ground cumin
½ tsp smoked paprika
½ tsp sea salt
Optional: 1 tbsp tomato paste or a splash of bone broth for depth
8 small corn or cassava tortillas, warmed
Toppings: shredded lettuce, diced tomatoes, avocado, fresh cilantro, lime wedges, plain yogurt or sour cream
Instructions
Heat oil in a skillet over medium heat. Add chopped onion and sauté until soft (about 3-4 minutes).
Add garlic and cook until fragrant, then add the Ancestral Beef, breaking it up with a spatula.
Once browned, stir in spices and optional tomato paste or broth.
Simmer for 5-7 minutes until flavours meld.Warm tortillas and spoon in the beef mixture.
Top with your favourite fresh fixings and serve with lime wedges for a bright finish.
